You want to start off with cold water. Trout love cold water.
I catch mine out of a creek an hour or so north.
Dispatch them humanely. I hit them on the head really hard.
Gut them and wash them.
I have literally never eaten store-bought trout, so this is the only way I know how to prepare them.
Warm up a pan with a little olive oil in it.
Take your whole trout, belly split in twain. Hold it so it's lying on its back and slip a thin strip of butter into it. That's all I do. Lay the trout down in the pan, head and tail and everything, and cook on a low heat until you can see that the meat is cooked through to the middle. Then flip it over.
Once the whole thing is cooked, it'll be white (I think).
Squeeze some lemon on that and eat it. You should end up with a classic cartoon head, ribs and tail kind of thing at the end. That's one of the best parts of this meal.
